Melt the butter in a large pot on medium-low. Add onion, saute for 4 minutes. Add garlic, saute until onion is tender.
Add sliced peppers, including seeds. Saute for another 4 minutes.
Add chopped beet and beet stem. Wait til the end to add the greens. Add a liberal amount of salt, pepper, cinnamon, and paprika. Cook for 6 minutes.
Add okra. Cook for another 6 minutes.
Add corn and lima beans. Add sugar. Cook for 7 minutes.
Add tomatoes, beet greens, mint, and cilantro. Cook until greens wilt and tomatoes shrivel, about 8 minutes. Add salt and pepper to taste. Serve.
