Vegetarian Beet Succotash

A vegetarian succotash recipe that features beets with traditional succotash ingredients.

Ingredients
  

  • 5 tbsp salted butter
  • 2 beets chopped
  • 1 yellow onion diced
  • 4 garlic cloves minced
  • 4 serrano peppers sliced
  • 30 oz golden corn (2 cans)
  • 15 oz lima beans (1 can)
  • 1 cup cherry tomatoes halved
  • 12 oz okra sliced
  • salt
  • pepper
  • 2 tsp cinnamon
  • 1 tsp paprika
  • 1 tsp fresh mint chopped
  • 2 tbsp fresh cilantro chopped
  • ½ tbsp sugar

  • 1 large pot

Method
 

  1. Melt the butter in a large pot on medium-low. Add onion, saute for 4 minutes. Add garlic, saute until onion is tender.
    Onion, garlic, and serrano peppers.
  2. Add sliced peppers, including seeds. Saute for another 4 minutes.
  3. Add chopped beet and beet stem. Wait til the end to add the greens. Add a liberal amount of salt, pepper, cinnamon, and paprika. Cook for 6 minutes.

  4. Add okra. Cook for another 6 minutes.
  5. Add corn and lima beans. Add sugar. Cook for 7 minutes.
    Add corn, lima beans, and okra
  6. Add tomatoes, beet greens, mint, and cilantro. Cook until greens wilt and tomatoes shrivel, about 8 minutes. Add salt and pepper to taste. Serve.
