Salchipapas

French fries and sausage covered in ketchup, mustard, mayonnaise, and aji chili sauce. Salchipapas are a popular street food in Peru, Bolivia, Ecuador, Colombia, and Argentina.

Ingredients
  

Salchipapas
  • 2 russet potatoes
  • 0.75 lb andouille sausage
  • salt
  • ketchup
  • mustard
  • mayonnaise
  • aji amarillo paste (can substitute favorite hot sauce)
  • vegetable oil (or canola, peanut, sunflower)

Method
 

  1. Wash and scrub the potatoes with water. Peel them if desired and cut into french fries. Add to a large pot.
  2. Cover fries with oil (either vegetable, peanut, or canola). There should be a couple inches of oil in the pot. Turn the burner onto medium-high heat. Keep uncovered. Fries will be ready to remove in about 15 minutes.
  3. While fries are cooking, slice sausage. Add a little oil to a skillet, heat up on medium heat. Add sausage to hot skillet, brown on both sides for a few minutes. Remove from heat.
  4. Once fries are golden brown, remove from oil and place on a paper towel lined plate to absorb excess oil. Salt while still hot. Let it cool briefly.
  5. Transfer the fries to another plate. Sprinkle sausage on top.
  6. Mix 1 part ketchup with 2 parts mayonnaise. Drizzle this over the fries. Drizzle the mustard and aji amarillo paste as well. Enjoy!
