Ingredients

  • 1 cup cornmeal plain
  • ½ cup flour all-purpose
  • 1 tsp baking powder
  • 1 tsp salt
  • 2 tbsp vegetable oil
  • 1 egg beaten
  • ½ cup water
  • 1 onion small and diced

Equipment

  • 1 large pot

Method

  1. Mix all ingredients together in a mixing bowl.
  2. Scoop mixture into small balls and put aside. If mixture is too sticky, add a little flour at a time until it becomes easier.
  3. Heat up a pot with about 2 inches of oil, canola or vegetable.
  4. Drop the hushpuppies into the oil. Make sure they are submerged. Fry for about 4 minutes or until golden brown.
  5. Take out hushpuppies, let cool and enjoy!

Notes

Feel free to add extra spices, like chili powder or garlic powder. You could finely dice a jalapeno for some extra spice. Also serving these with some queso is strangely delicious!
