First, dice the scallions and slice the ginger. Put aside 1/3 of your ginger and scallions in larger chunks to use when you fry the chicken.
Combine the majority of your scallions and ginger with the Coca-Cola in a pot. Turn it up to medium heat.
Stab the chicken on both sides with a fork. Rub both sides with salt. Wait for a few minutes, then pat the chicken dry with a paper towel.
Cover the bottom of a large skillet with canola oil. Put it on medium heat.
Once the oil is hot, put in the ginger and scallions you set aside. Fry for 2 minutes, then push to one side of the skillet. Add your chicken, skin side down. Fry for 3 minutes on both sides, or until both sides have a light browning.
Once the Coca-Cola mixture is boiling, add it to the skillet. Cook for 10 minutes.
Turn the heat up to high and cook for 10 minutes to boil off excess water. Reduce heat and let sauce thicken for 4 minutes.
Take chicken out of skillet, plate it and pour sauce on top. Garnish with any leftover scallion, and sesame seed.
