Prepare Chimichurri
- Combine the chimichurri ingredients in a mixing bowl and stir thoroughly. Put in a blender if the herbs aren't chopped finely enough. Set aside and let the flavors mesh. The longer, the better.
Cook Chorizo
- If using a stove, add about ½ inch of water to a skillet with your chorizo sausages. Heat up on medium until the water begins to simmer, turning occasionally. Cover the skillet with a lid, and let the sausages steam for 10 minutes.
- Pour out any remaining water. Sear the outside of the sausages for a few minutes. Poke a hole to let out any liquified fat so the sausage can cook in it.
- Toast your buns briefly, spread chimichurri on both sides. Put a sausage in the middle. Add pickled onions and mustard if desired. Enjoy!
