Choripan - Argentina's Hot Dog

Ingredients
  

  • 3 chorizo sausages
  • 1 baguette
  • pickled onions (optional)
Chimichurri Sauce
  • ½ cup parsley finely chopped
  • 2 tbsp oregano finely chopped
  • 4 garlic cloves minced
  • 1 shallot minced
  • cup olive oil
  • ¼ red bell pepper diced (optional)
  • 2 tbsp red wine vinegar
  • ½ tsp salt
  • ¼ tsp cayenne pepper (optional)

Method
 

Prepare Chimichurri
  1. Combine the chimichurri ingredients in a mixing bowl and stir thoroughly. Put in a blender if the herbs aren't chopped finely enough. Set aside and let the flavors mesh. The longer, the better.
Cook Chorizo
  1. If using a stove, add about ½ inch of water to a skillet with your chorizo sausages. Heat up on medium until the water begins to simmer, turning occasionally. Cover the skillet with a lid, and let the sausages steam for 10 minutes.
  2. Pour out any remaining water. Sear the outside of the sausages for a few minutes. Poke a hole to let out any liquified fat so the sausage can cook in it.
  3. Toast your buns briefly, spread chimichurri on both sides. Put a sausage in the middle. Add pickled onions and mustard if desired. Enjoy!
