Cajun Shrimp and Grits

Ingredients
  

The Grits
  • 1 cup grits yellow
  • 3 ¾ cup milk
  • ½ cup butter
  • ½ cup gouda cheese shredded
  • ¼ cup cheddar cheese shredded
  • 1 tsp salt
  • ½ lemon juice
The Shrimp
  • 1 lb shrimp
  • 1 tbsp olive oil
  • 2 garlic cloves
  • tsp Cajun seasoning
  • pepper
  • paprika
  • 2 green onion sliced

Method
 

  1. Heat up the milk in a pot on medium heat. Watch it carefully so it doesn't boil over. It doesn't have to boil. Stir the grits in, add the salt. Stir occasionally so the grits don't stick to the bottom.
  2. Once the grits have absorbed the milk, turn the heat down to low. Add the butter and the cheese. Stir until they have melted completely. Add the lemon juice. Taste and make any desired changes. (more milk more cheese, etc.)
  3. Heat up a tbsp of olive oil in a skillet on medium. Smash 2 garlic cloves (or mince) and add them. Add your shrimp. Season the shrimp with cajun seasoning, pepper, and paprika. Cook for 2 minutes and flip.
  4. Season the other side of your shrimp while cooking for the final 2 minutes. You can add the green onion to the skillet or save to use as a fresh garnish. Serve the grits with a healthy number of shrimp on top.
