Ingredients
  

  • 3 bananas
  • 1 cup flour
  • ½ cup whole milk
  • salt
  • 1 tbsp baking powder
  • 1 tbsp powdered sugar optional
  • 2 tbsp butter

  • 1 large skillet or griddle

Method
 

  1. Mash the bananas in a large mixing bowl. Add flour, milk, salt, and baking powder. Stir thoroughly till combined and it has a pancake batter like consistency.
  2. Melt 1 tbsp of butter in the skillet on medium heat. Spoon your batter onto the skillet into pancakes. Cook for about 3 minutes, or until bubbles start forming on the top. Flip the fritters, cook another 2 minutes and take them off.
  3. Melt the other 1 tbsp of butter and repeat for the rest of the batter.
  4. Top the banana fritters with powdered sugar, or with maple syrup, your preference.
